Wednesday... Chatter

Hello there,
     I have been at mamas house hanging out with my daughter older who has been struggling so much...    So if you have a moment pray for her, for her panic to calm down so she can get back up...    She is down low about to lose her new van because of being sick not being able to work loke before times are tuff and she needs help beyond, thank you if you can...
     Before I went with her the other day...    I got this little cute little item in the mail...    I barely paid anything for it but I think its so cute...
      Isn't it so cute,  a little tea bag holder kitty...    
      I love her....    It makes me feel happy....
      The sweet lady also sent me this spoon with a recipe on it,  I thought that was so nice and loving of her...    adorable...    
      A triple chocolate fudge cake...    Wonder what it taste like???    We will have to make it and see...

      Well, while I was there I got another cabinet cleaned out so I think all the cabinets have been gone threw in the kitchen... All the piles are gone.. All the rooms have been gone threw now.  I just have one room where we put all the things to sell and keep...    So now we can continue with the down stairs which there is still quit a bit but we made a major dent... The weeds are all cleaned up out of the back...    So after the basement is the attic...   It's been so hard with so much going on...    But I just try to stay focused and trust in the lord and my heavenly Father...    
      These are quesadillas or some people say empanadas...    I learned how tomake these along time ago...    So I made them for my grandchildren and daughter along with spaghetti sauce. For a couple of meals so she did not have to cook...   
      They are made with masa and a touch of flour and salt...    And a filling of beef, potato cheese etc...     
     This time I changed it up a bit and boiled and smashed my potatoes and mixed the queso (cheese) together...    Usually i brown the beef cube the potato in tiny cubes with a sauce I make...    You make like a round tortilla. Fill it fold it in half like a taco and pinch the ends together and fry them..   After you cut them open add fine shredded lettuce and salsa a different mexican cheese queso fresco...    They hardly ever reach that part though they eat them up before...    Lol...


      I made like 25 of them...

      It's tea time....    It's cold out this morning the sun is shinning but it's cold...
Have a wonderful day today, for me it is bills and cleaning the rest of my living room...

  1. Oh those empanadas look delicious! I have never tried making those. They're really pretty too. I can see why that little kitty teabag holder makes you happy. It's the cutest! What a find. Sorry to hear about your daughter's hard times. I will say a little prayer for her. I know she loves and appreciates having her mama close by.
