Saturday Mornin, Lemon Cake


LEMON LAYER CAKE W/LEMON CREAM FROSTING

2CUPS ALL PURPOSE FLOUR
1 TEASPOON BAKING POWDER
1/2 TEASPOON BAKING SODA
1/2 TEASPOON SALT
1 1/2 CUP GRANULATED SUGAR
1/2 CUP UNSALTED BUTTER, SOFTENED
3 LARGE EGGS
2 TABLESPOONS LEMON ZEST (I MINCED MINE)
2 TABLESPOONS FRESH SQUEEZED LEMON JUICE
1 CUP NONFAT BUTTERMILK OR REG

FROSTING:
8 OZ. CREAM CHEESE SOFTENED
2 TABLESPOONS BUTTER SOFTENED
1 TABLESPOON LEMON ZEST (I MINCED MINE)
2 TABLESPOONS FRESH SQUEEZED LEMON JUICE
3-4 CUPS CONFECTIONER'S SUGAR
COCONUT FLAKES AND /OR BLUEBERRIES FOR GARNISH OPTIONAL

1. PREHEAT OVEN TO 350 F. GREASE AND FLOUR 2- 8 INCH ROUND CAKE PANS.
2. IN A MEDIUM BOWL COMBINE FLOUR, BAKING POWDER, BAKING SODA, AND SALT STIRRING WITH A WHISK.
IN A SEPARATE, LARGE MIXING BOWL BEAT SUGAR AND BUTTER UNTIL FLUFFY ABOUT FIVE MINUTES, BEAT IN EGGS ONE AT A TIME. BEAT IN LEMON ZEST AND JUICE. BEAT IN FLOUR AND BUTTERMILK IN THREE ADDITIONS , ALTERNATING BETWEEN THE TWO AND BEGINNING AND ENDING WITH FLOUR.
3. POUR BATTER INTO PREPARED PANS: SHARPLY TAP PANS ONCE ON COUNTER TO REMOVE AIR BUBBLES. BAKE AT 350 F. FOR 32 MINUTES OR UNTIL A TOOTHPICK INSERTED COMES OUT CLEAN. COOL IN PANS 10 MINUTES. REMOVE FROM PANS, CONTINUE COOLING ON WIRE RACK.
4. IN A LARGE BOWL COMBINE CREAM CHEESE, BUTTER, LEMON JUICE AND ZEST BEAT UNTIL LIGHT AND FLUFFY. ADD CONFECTIONERS SUGAR ONE CUP AT A TIME ( I PUT MINE THROUGH A STRAINER TO REMOVE HARD LUMPS IF ANY) UNTIL FLUFFY AND OF A GOOD SPREADING CONSISTENCY. FROST CAKE WHEN COMPLETELY COOLED, STORE IN REFRIGERATOR.

MY FAMILY ENJOYED THIS CAKE AND SO DID I. I WOULD HAVE LOVED TO ADDED THE COCONUT N BERRIE BUT THEY DON'T LIKE COCONUT..ONE DAY FOR A PARTY...I WENT TO THIS OLD STOMPING GROUNDS YESTERDAY WITH VEE. IT'S A PLACE DOWN FROM MOM'S 18TH STREET IN SAN FRANCISCO. THEY NOW HAVE MORE LITTLE RESTAURANTS THEN BEFORE BUT THIS ONE TINY PLACE IS JUST A SOUP SANDWICH AND SALAD. CALLED HAZEL'S KITCHEN I LOVED IT BEFORE AND I LOVE IT NOW. HER SHOP IS TINY BUT SUFICIANT. I WOULD LOVE TO OWN THAT. I GOT A AVOCADO TOMATO CHEESE LETTUCE SPROUTS CUCUMBER ON WHEAT AND A SMALL CAESAR SALAD TINY ONE BUT LATER WHEN I ATE THE OTHER HALF OF MY SANDWICH I ATE THE SALAD FOR DINNER IT WAS THE MOST TASTY LITTLE SALAD EVERY THE DRESSING WAS GREAT WISH I KNEW WHAT IT WAS. HUM..WONDER IF THEY TELL ME????? PROBABLY NOT..LOL..IT WAS GOOD DON'T KNOW IF I COULD FIGURE IT OUT. HERE'S A FEW PHOTOS OF HAZEL'S


ALL HERE DISHES ARE RETRO, EVERYTHING, BOWL SHE MIXES WITH SERVE WITH ETC..I JUST LOVE IT THERE.
