I found this cake in a recipe book called Ebony...I hope that you enjoy it..The only problem I had was It said to cook it for 30 minutes and I think my oven cooked it in 20-25 mins..so check your cake..I tested mine but I thought I'd leave it a few more minutes..bad choice..It still tasted great though..
Ginger Cake
Ingredients:
2 cups of flour 1/3 cup soften butter
1 teaspoon baking soda 1/2 cup sugar
1/2 teaspoon salt 1/2 cup molasses
1 teaspoon ginger 2 eggs
1/2 teaspoon cinnamon 1/2 cup sour milk (I used
1/2 teaspoon allspice 1/2c milk w/1/2tea vinegar
Sift dry ingredients. Cream butter and sugar. Add beaten egg and molasses. Mix well. Blend in spices. Add milk and flour alternately. Beat well. Pour into a greased shallow pan. (I used a round) Bake at 375 degrees oven for 30 minutes. Cool & Cut. Serve with Lemon Curd, Whipped Cream or Apple sauce.
I used my doily underneath on the cake plate...
I served it with fresh whipping cream...I like it and I'm going to make it again...and I think I will make some apple sauce and whipped cream to go with it...YUMMY......I decorated it with powder sugar to make it like a Christmas cake...

Janice this ginger cake looks so lovely, with the springling of lacy sugar on top. My Mom always made gingerbread with lemon sauce, so sometime you should try it with the lemon curd. I LOVE all yuor beautiful green glassware and the doilies, too.
