Just a little bit of this and that...

Good mornin, I hope that everyone had a wonderful Christmas Eve and Christmas day...I know I did..
         My grandchildren had a wonderful time so they told me...My one Billy said it was the best ever...to sweet..I made them Lasagne and they were so happy with it..That made grandma, me very pleased and glad that they were there...I finally got my two dish cloths made haven't used them yet, just finished yesterday.
Mom ended up in the hospital but is back home now and feeling much better but somethings wrong with her lungs she has to be on oxygen we go to visit the lung doctor this week coming to find out more. She doesn't smoke or has never. but dad smoked in the house and my brother too...so thats the scoop for that...
                      Thought I would share my Dinning Room Table this morning with you
 I changed it from Christmas to blue & white for New Years....maybe me and my new bow
with have New Year's dinner here we talked about it last nite...I'm thinking to make some Crab Cioppino. P.s. by the way I'm very happy with my new bow, very content...
I love my blue & whites...........


This is my coconut cloud cake...I made this the other day...I had to through it out cause when I made the Lemon curd I used a metal spoon and I had never made it before and I didn't know so the Lemon curd tasted like metal...boo hoo..
So I will have to make a new one soon. This frosting was great though...lol

Good morning...just some babble and snowmen


Can you believe that it is almost Christmas...I can't ..It's raining outside quite a bit. I'm over at Mom's. It's been a while since I've done a morning post. I spend the nite because Mom isn't feeling to well. And I need to get her up and going to the dr office or E.R....
She is so stubborn at times. But I think I can motivate her this morning...Well let's hope so...
  I love this photo of this sweet little snowman, Snowmen are my most favorite. I remember making then as a child...
My Uncle and Aunt Ann live up North and every winter and summer spring break I was there... Winter's were just as great as summer's...Lots and lots of snow all the way up to the front door. Sometimes we got snowed in..and my Uncle would have to dig us out...
 We always had a grand time, going sled riding and ice skating..and just plain playing in the snow throwing it at each other..I remember this one time my mom put on some ice skates...and boy she was going to show us how to do it, ice skate that is...and she went around and fell smack on her butt...My uncle laughed at her for days. silly...

  
Well my friends, seven more days till Christmas Eve...I'm going to have my ex daughter in law and three of her children, my grandchildren and Vee and her partner and Baby Isaiah...It will be his first Christmas...and last nite I found out my new bow will be coming too...He lives here where I do which is wonderful...So I will meet him for the first time before then and we will have time to get to know each other more better which is wonderful. Well I'm off to try and visit everyone. Wishing you a most wonderful new week and just incase I don't get back here a most wonderful and blessed Christmas and New Year, Just in case.....with love Janice

Making Conchas (Mexican pan)

Well yesterday I got bored so I have been eye balling these Mexican Pastry's for a while now and I finally got brave and made them. They are called Conchas...I almost forgot to tell you that conchas are shells in Spanish.....


                                                         CONCHAS.................
Dough
1 package dry yeast
1/2 cup warm water (115-120 F)
1/2 cup warm evaporated milk (115-120 F)
1/3 cup sugar
1/3 cup butter, melted
1 egg
1 teaspoon salt
4 cups all purpose flour
1/2 teaspoon ground cinnamon

Topping
1/2 cup butter, softened
2/3 cup sugar
1 cup all purpose flour
2 teaspoons ground cinnamon
1 teaspoon vanilla

In a large bowl stir together yeast and warm water, let stand for ten minutes. Stir in evaporated milk, 1/3 cup sugar, melted butter, egg, and salt. Stir on 2 cups flour. Gradually stir in remaining 2 cups flour and the 1/2 teaspoon cinnamon to make the dough.
Turn dough out onto lightly floured surface. Knead 3-5 minutes, until smooth and elastic. Shape into a ball and transfer to a greased bowl, turn he dough to coat. Cover and let rise until doubled, about 60-75 minutes.


Meanwhile, for the topping, in medium bowl, beat softened butter with mixer on medium for 30 seconds. Add 2/3 cup sugar, beat until well mixed. Stir in 1 cup flour, 2 teaspoons cinnamon, and vanilla.
Punch down the dough then cover an let stand ten minutes. Divide dough into 12 pieces.







 Roll each piece into a ball and place 3 inches apart on a parchment lined  baking sheet. press balls down slightly. Divide topping into 12 balls, pat each ball flat. Place one round of topping onto each dough ball.
use a sharp paring knife to cut grooves in the topping to resemble a scallop shell.


 Cover rolls and let rise until doubled, about 45 minutes.
Meanwhile, preheat oven to 375 F.  rolls 18-20 minutes, or until light golden brown. Remove from baking sheet and cool on wire racks.


 I hope that you give these a  try, I had a blast making them...was a challenge for me. And I have to say they came out pretty darn good....Hoping that your week has been great so far...Mine has and I will soon tell you about my most lovely morning I had....Meeting a new bow....

Ebony Ginger Cake...first time making it

                                                                  
I found this cake in a recipe book called Ebony...I hope that you enjoy it..The only problem I had was It said to cook it for 30 minutes and I think my oven cooked it in 20-25 mins..so check your cake..I tested mine but I thought I'd leave it a few more minutes..bad choice..It still tasted great though..

                                                                  Ginger Cake
 Ingredients:                           
2 cups of flour                                           1/3 cup soften butter
1 teaspoon baking soda                             1/2 cup sugar
1/2 teaspoon salt                                       1/2 cup molasses
1 teaspoon ginger                                      2 eggs                               
1/2 teaspoon cinnamon                             1/2 cup sour milk (I used
1/2 teaspoon allspice                                1/2c milk w/1/2tea vinegar 

Sift dry ingredients. Cream butter and sugar. Add beaten egg and molasses. Mix well. Blend in spices.  Add milk and flour alternately. Beat well. Pour into a greased shallow pan. (I used a round) Bake at 375 degrees oven for 30 minutes. Cool & Cut. Serve with Lemon Curd, Whipped Cream or Apple sauce. 

 
 I used my doily underneath on the cake plate...

 I served it with fresh whipping cream...I like it and I'm going to make it again...and I think I will make some apple sauce and whipped cream to go with it...YUMMY......I decorated it with powder sugar to make it like a Christmas cake...

 I use Red & White, White plates, then Jadeite plates and white soup bowls and Depression glass green and Jadeite
 Jadeite tea cups, green depression glass saucers in between the Jadeite saucer...

 The doilies are the ones I have for sale......I love these
