Honey Custard

Honey Custard .... Second blog today for you...enjoy...sounds so wonderful.......don't you think ???
I haven't tried it yet, it's in my new Tea Time magazine that Mom got for me...so ever grateful.........

                      Yield 12 servings....Prepartion. 2. minutes...Bake 1 hour...Refrigerate 4 hours

Ingredients:
9 large eggs
3/4 cups of sugar
3 cups of heavy whipping cream
5 Tablespoons orange blossom honey
1 1/2 teaspoons pure vanilla extract
Garnish: fresh berries and honey

Directions:
Preheat oven to 275. degrees
Place a clean dish towel in bottom of a baking dish large enough to accommodate 12 (4oz.) custard cups. Set aside.
In a medium bowl. combine egg yolks and sugar, whisking to blend. Set aside.
In a small sauce pan, combine cream, honey and vanilla. Bring to a simmer over medium-low heat, but do not boil. Slowly add cream mixture to egg mixture. whisking constantly. Skim any foam off the top of custard,
Evenly divide custard mixture among 12 custard oven proof custard dishes. Place custard  cups in prepared baking dish. Fill baking dish with enough water to come halfway up the sides of the custard dishes.
Bake until center is set, 40 - 60 minutes. Carefully remove custard cups from hot water. Cool on a wire rack for one hour.

Cover and refrigerate for four hours to overnight. Serve cold. Garnish with fresh berries that have been tossed in a little honey...if desired...
