Aiken House & Gardens: A Sunroom Christmas Tea

A Lovely Little Tea Cake for you


 
Coconut-Lemon Loaf
  • 1 cup granulated sugar
  • 3 Tablespoons unsalted butter, melted
  • 3 Tablespoons canola or vegetable oil
  • 1-1/2 Tablespoons finely grated lemon zest
  • 1 teaspoon lemon extract (I used lemon juice instead of extract)
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 2 large eggs
  • 3/4 cup buttermilk
  • 2-1/2 cups all-purpose flour
  • 2-1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup (2 ounces) sweetened flaked coconut
  • Coconut-Lemon Glaze
  • 1/2 cup confectioner's sugar
  • 1 Tablespoon lemon juice
  • 1 teaspoon melted butter
  • 1/4 teaspoon lemon extract
  • 1/4 cup sweetened flaked coconut

In a medium bowl, whisk together flour, baking powder and salt. Set aside.

In a large bowl, whisk together granulated sugar, butter, oil, lemon zest, lemon extract, vanilla extract and milk.

In a small bowl, whisk eggs and buttermilk until evenly blended.

With a wooden spoon, stir about a third of the flour mixture into the sugar mixture, then alternately add half of the egg mixture and half of the flour mixture, stirring after each addition just enough to blend. Stir in coconut.

Pour batter into a 9 x 5 loaf pan lined with parchment paper (or greased and floured). Place in a 350 degree oven on the center rack for about 45 to 50 minutes or until a toothpick inserted in the middle comes out clean.

When it comes out of the oven place pan on a cooling rack for about 15 minutes before removing the loaf from the pan.
While it's cooling, make the glaze.

A little helo....

Good afternoon everyone....just thought I'd pop in and say helo...I hope that everyone have a lovely Thanksgiving. I did. My oldest daughter and three of her children came for dinner. I did all the cooking and realized I think next year they can all cook...my days of cooking all by myself are pretty much done for a big event. It was tuff on my by the evening I was so burnt out...yesterday I couldn't even stay away all day I was just so tired. Coarse it mite had had something to do with not sleeping go in the evening since I've had this silly rash...Today is a lovely day. I went into the garden to check things out... And realized I had forgotten to pick up the old tomato branches out in the back behind the little cottage storage. 

I'm at mom's house came over to pick up some cash, I have another boil on my arm and it's swelled up...so we thought this time to try some vitamin E...to draw it out faster...I don't have a clue what the world is going on with my body but boy it's driving me out my mind..between the itching and then a few of them getting infected from scratching. But the thing is it doesn't seem as if they should get so carried away..I was my hands constantly...well this thursday I can finally go to the doctors..I just can't wait...
 Vee and Isaiah are doing just fine..she has continued to breast feed which has made me very happy...though he's a little piggy...lol...he eats and eats. She's had to give a bottle sometimes after...but he is just to sweet It's wonderful having a little man in the house...well I think that's it for now...wishing everyone a lovely weekend and new week...I'm off and running to Walgreen's for some vitamin E...with love Janice

Homemade Pizza.........yummy

I found a simple nice recipe for pizza...Vee loved it and so did I...

Ingredients:
Dough:
2 1/2 AP flour
1/2 tea. salt
1 package dry yeast (4oz.)
1tbsp. plus 2 tsp. olive oil
3/4 cup pizza sauce
12 oz. Mozzarella, shredded
about a pound of ground Turkey 
One medium slice Zucchini
1. Preheat oven to 400 degrees. Lightly grease a baking sheet. Sift the flour, salt into a large bowl.  Make a well in the center and add the dry yeast and olive oil, and one cup of lukewarm water. Mix until a soft dough forms. Turns the dough out onto a lightly floured surface and knead gently for five minutes.

2. Roll out dough and press into prepared baking sheet.  Cover and allow to rest for 10 minutes at room temperature, then bake for 5-7 minutes.


3.  Remove crust from the oven and spread pizza sauce on top. leaving a 3/4 inch border. Arrange the mozzarella on top and then add browned turkey. bake for another 15-20 minutes.
Okay here's what I did I put some oil in a skillet and added the ground turkey and   cooked it well, I added some Herbs de Provence

For the sauce I used a crushed tomato for the sauce from smart and final, it's a nice one...

 

 I used a small amount cause I don't like to much sauce. I added some Italian Herb Seasoning to it..mixed it up and spread it over the dough.

The Zucchini, I fried it a little bit in some butter then spread them around the pizza.

 then the cheese and turkey meat cooked it up ... and yummy

 Such a simple simple recipe...next time I think I'm going to use some articokes from the can...and I don't know what else.

Fantasy Fudge for you...(recipe)

I just loved making this, I have never made fudge before...I had a great time...I finally got a candy thermometer so I was able to..I haven't a clue why I never made it before. 
Fantasy Fudge

What You Need


3  cups  sugar

3/4  cup  butter or margarine

1  small  can (5 oz.) evaporated milk (about 2/3 cup) (Do not use sweetened condensed milk.)

12  oz.  BAKER'S Semi-Sweet Chocolate, chopped

1  jar  (7 oz.) JET-PUFFED Marshmallow Creme

1  cup  chopped PLANTERS Walnuts

1 tsp.  vanilla

Make It


LINE 9-inch square pan with foil, with ends of foil extending over sides. Bring sugar, butter and evaporated milk to full rolling boil in 3-qt. saucepan on medium heat, stirring constantly.


Cook 4 min. or until candy thermometer reaches 234°F, stirring constantly. Remove from heat. 
 
ADD chocolate and marshmallow creme; stir until melted. Add nuts and vanilla; mix well.
POUR into prepared pan; spread to cover bottom of pan. Cool completely. Use foil handles to lift fudge from pan before cutting into squares.  


Kitchens Tips

Size-Wise
A serving of this sweet treat is 2 squares. You'll find that a small portion goes a long way on chocolate flavor.
Note
Do not substitute sweetened condensed milk for evaporated milk.

Feeling blue today........

Just hanging out at Mom's, I got up and came over around 9am...I had a horrible nite itching...And Vee woke me up out of a dead sleep cause she was so tired and told me that she couldn't feed the baby anymore. She couldn't do the breast feeding business it was to painful...Well of course I was disappointed, but it's her child rite...And there have been some other issues with me...but I rather not go into details, But I made a couple of poor choices and I'm not to happy about them...So I came to Mom's to think about all the above and clear my head..
It's something I need to do right now, Believe Hope and Wish......I feel lost today.... for some silly reason..
Maybe I'm just tired out....



Then I think that maybe I expect to much of others ..

Well just going to trust in the Lord to see me through this..

Much prayer is needed

Finally arrived....A wonderful day...

ISAIAH SINCERE BONILLA BORN: NOVEMBER 8 12:44 PM
7 LBS. 5 OZ.   WHAT A NIGHT WE WENT THROUGH...THOUGHT HE WAS COMING BUT DIDN'T HAPPEN TILL THE NEXT DAY ...IT WAS SO EXCITING. I CUT THE CORD FIRST TIME IN MY LIFE. ..that was a wierd thing but also exciting...It was so so amazing to watch my grandson be born.  I was worried and excited all at the same time...but when he came out it was a relief to know him and Vee was going to be just fine now...she had some strong pains and I'm very proud of her she did such a good job..she had him natural.
MOMMY AND BABY FINALLY TOGETHER AT LAST....

 Such a blessing....what an event...Thank you my heavenly Father for seeing them through...I'm ever so grateful to have witnessed this come to life...In my heart forever Victoria Reinelda Bonilla and Isaiah Sincere Bonilla..................

Just a few photos...

Helo my sweet friends, I just came by to visit Mom this morning. The weather went to foggy and ugly today...we had a few sunny days which was nice...I just thought to post a few photos of my I call granny dishes and my dinning room table..
 These are my favorite favorite dishes...I been collecting them for ever...The only thing that I don't have is a sugar bowl. I have two creamers...
 
I set my Dinning Rm table with the granny dishes and green depression glass and blue...
Love it...well not much going on..I still have this rash all over me. Going today to make an appointment with the dermatologist dr. said I needed to go.. Hopefully he can figure out whats going on with me...I'm going crazy,...I wake up itching in the middle of the nite..
JUst yukie....
well I'm off to chill with mom ... we are just waiting for Vee to pop..lol..she is so ready. She is going to the dr's today. so we will see what the dr. has to say..

Lovely day....New Tea Pot....cookie recipe...So many things


Good afternoon, Well I have been home a lot lately...Vee's baby should be coming any day now...we and of course her can't wait..she is done completely...we are so ready to meet Isaiah....
Well, as you can see I had a urge to go visit the Tea house and I found this love Tea pot...It's not porcelain or China..just plain glass but I adore it just the same...I fell in love with it....

I also bought a new Blue & White tea cup..I wanted many other items but my income doesn't always fit everything...I did purchase a couple of other items she is holding for me...



 I love the tiny flowers inside the tea cup, I think it's always wonderful when flowers are printed inside...

 (I'm still trying to get used to my camera...lol vee showed me the color adjustment)

Cookie recipe...Peanut butter Cream sandwich cookies...

1/2 cup peanut butter
1/2 cup of butter
1 cup of packed brown sugar
1 egg
1 tsp. vanilla
1 tsp. baking soda
1/8 tsp.. salt
1-1/4 cups of flour ap 
Granulated sugar
1 recipe Peanut Cream filling


1. Preheat oven to 350 degrees F.  In a bowl beat peanut butter  and butter with mixer on medium speed for 30 seconds...Add brown sugar, egg and vanilla.  Beat until combined, scraping sides of bowl.  Beat in baking soda, salt and as much flour as you can.  Stir in remaining flour.   




3. Bake 7 to 8 minutes or until edges are lightly browned.  Cool on baking sheet for one minute.  Transfer to wire rack; cool.

4. Spread on teaspoon full of Peanut Cream filling on flat side of half of a cookies.  

Top with remaining cookies.  Store in airtight container at room temperature up to 3 days. Freeze, unfilled cookies up to one month.

Peanut Cream filling:

In medium bowl whisk together 3/4 cups of peanut butter, 3/4 cups of marshmellow creme, 3 tablespoons milk, 3/4 teaspoon ground cinnamon gradually whisk in 3 tablespoons powdered sugar.... 
Makes 4 dozen, ( which means cookies are small )
