Teatime cake...

Good morning dearest,
        I made this cake from Susan Branch it was May's mother day cake a darling little one round cake and fairly simple to do...
      She made a sauce for it but I just wanted something different for me...  So I switched it up... A bit 
       After it baked and cooled off I sliced through the middle of the layer..  To half it..  They I got a fresh jar of raspberry jam..  And I spread it on the middle layer and I drained a small can of crushed pineapple and I made a fresh batch of whipped cream.  Mix the drained pineapple with the fresh whipped cream.  I made my cream with heavy whipping cream and powdered sugar, then after it was complete I folded in the crushed drained pineapple. 

  After the jam I put back on the top piece and spread the pineapple whipped cream over the top nothing fancy and I sprinkled half of it with very fine chopped walnuts.. Because not everyone like them, but they are so fine it is not strong in flavor...
       This was for me so I used my one cup Mom teapot and cup which I happen to love inside the cute cup it says Hi Mom...all the things that I love Blue white and polka dots and roses... 
      I love it...  And now to try the changed up cake ...


       I think I rather like it well, the boys like it too...   They wanted more...  So cute..
              
                        Susan Branch Mother's Day recipe
Cake:
1/2 cup hot milk
1 rounded teaspoons of butter
2 eggs
1- cup sugar
1- cup flour divided
1- teaspoon baking powder
1- pinch of salt
1- teaspoon vanilla extract
PREHEAT OVEN to 350 degrees.  Butter a 8 inch round baking pan.  Melt the butter into the hot milk.  & set it aside.  Whisk the eggs well in a medium bowl.  Gradually whisk the sugar in, beat well.  Stir in half the flour, the baking powder, the pinch of salt and vanilla.  Stir in the other half othe flour and the hot milk and butter mixture.  Pour the batter into the cake pan and bake for 40-45 minutes or check few minutes before mine was finished in 40.  You will see the edges pull away from the pan & tooth pick comes out clean.  
She says this is a old fashioned milk cake makes a perfectly delightful breakfast in bed kr tea party cake...  ❤️
 Here is here sauce:
1 " piece of vanilla bean 
2- cups heavy whipping cream
1/4- cup sugar
Slit vanilla bean in half lengthwise, & scrap seeds out into a small saucepan.  Stir in the cream and bring to a boil.  Add sugar, stir well, cool ~ then chill well.  
Slice cake if using the sauce version, pour the chilled sauce into a dish and put the slice of cake on top.  Enjoy
