I woke up early this morning knowing I had to come clean at Mama's today..
And I was ready to go, but I wanted to bake a goodie as Mama used
to call it for everyone to show them I appreciate their hard work.
My Granddaughter Rosalinda has been very helpful
and if she only knew how much
I really appreciate her.. Everyone my oldest daughter Stephanie and my youngest Victoria
So it's my way of thanking them..
So you ask what did I bake
well I baked Banana Bread and Apple Buttermilk Cake..
Pulled out the Teapot and the teacup
Put the water on turned the dryer on.. lol and tie up the hair..
Got the recipe out then all the ingredients
And away I went..
I had found the recipe a long time ago when I would sit with Mama and surf the web when
she went off to bed.. I finally got around to making it
and I really like it and so did my granddaughter Rosalinda..
Though there was a mistake in the recipe about baking time It was I say really good
with tea..
You might have a recipe already for it. but I thought just the same in case
you hadn't I would share the recipe with you
so you can have it for tea..
Apple Buttermilk Cake
Ingredients:
One cup of Flour
1/2 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1/4 teaspoon Salt
1/2 teaspoon Cinnamon
and a pinch of fresh Nugmeg...
then
1/2 stick unsalted Butter softened
2/3 cup plus 1 1/2 Tablespoons Sugar Divided
1/2 teaspoon Vanilla
I Large Egg
1/2 cup Buttermilk ( In case you don't have Buttermilk 1 cup of Milk and 1 Tablespoon of vinegar or
1 cup of milk and Lemon juice about 1 Tablespoon)
1 Large Granny Smith Apple peeled and sliced
2 Tablespoons Brown Sugar
And a little bit of Brown Sugar extra
Turbinado Sugar (to sprinkle on top of Cake)
(I sprinkled regular sugar before I baked all over the apple and cake)
(and finished with Powdered Sugar)
Preheat oven to 375 degrees w/rack in the middle
Butter and lite flour a 9 inch round cake pan.
Whisk together Flour, Baking Powder, Baking Soda, Salt Cinnamon and
fresh Nutmeg.
Beat Butter and 2/3 cup Sugar with electric mixer at medium high speed
( I used my Stand Mixer)
until pale and fluffy. Beat in Vanilla. Add the Egg and beat until
combined. At low speed
Mix in Flour mixture in 3 batches alternating w/ Buttermilk. Beginning and Ending
with Flour. Mixing until just combined
In a small bowl combine Apple slices with Brown Sugar and extra Cinnamon
Stir until Apples are coated. Spoon the batter into the baking pan smoothing it out.
Place Apple slices evenly over top and sprinkle w/Turbinado Sugar. Bake until cake is golden
Brown and wooden toothpick comes out clean. About 25 minutes.
( I had to cook mine longer you have to check on it..
Cool in pan 10 minutes
then turn out on to a rack for 10-15 minutes
Invert onto a plate Serve with Vanilla Ice Cream.
