Special sweet potato pie

     Yesterday, while I was cleaning in the kitchen I notice that the blue basket that I keep the potaoes and onions in had a lot of sweet potatoes..  so I thought I should do something but what...  I know I will do a sweet potato pie because I have never made one and no ones here to disturb me..  So I searched online and found this, by McCormick...  
     It was fun and a challange with the meringue on top...

πŸ€πŸŒΈπŸ .    SWEET POTATO PIE WITH MARSHMALLOW MERINGUE.  πŸ πŸŒΈπŸ€

     For the Crust:
INGREDIENTS:
1 1/4 cups flour
1 Tbsp sugar
1/4 tsp salt
1/2 cup (1 stick) butter, cold, cut into chunks
3 Tbsp ice cold water
     Mix the flour, sugar, salt together in a large bowl. 
 Cut in the butter using a pastry blender or two knifes.  Until it resembles pea size crumbs.  Add the ice water by the tablespoon full, tossing dough with a fork after each addition.  Add enough water so dough comes together. 
 Then gather dough into a ball.
  Roll out dough on a slightly flored surface to a 12 inch circle 1/8 inch thick.
 Carefully transfer dough to pie dish.  Gently push down bottom and sides trim edging leaving a 1/2 inch from pie plate.
     Fold under and flute edges.  Refrigerate till ready for use.  ( I lost my photo for the fluted edges)πŸ˜”

FILLING:
INGREDIENTS:
1 1/2 lbs Sweet potatoes about 2 large
1/2 cups brown sugar
1 cup heavy cream
1/2 cup (1stick) butter, melted
2 eggs slightly beaten
2 tsps pure vanilla extract
1 tsp cinnamon
1 tsp ground ginger

DIRECTIONS:
Preheat oven to 350'.  Wash the sweet potatoes clean.  Then pierce them with a fork, I did both sides. Then place them in a foil lined baking dish..
     And bake them for one hour or until fork tender.  Then remove and let cool.  I peeled them and cut into pieces placed them in a bowl and smashed them with a potato smasher. 
     Smash until smooth.  Then add all remaining ingredients to mixture and mix well.  Pour into pie shell and bake at 425' for 15 minutes.  Then reduce heat to 350' for 35-40 minutes more or untill a knife inserted comes out clean.. cool completely.  I had to leave 15 minutes more past the 40 minutes.  That is why my crust is darker.

MARSHMALLOW MERINGUE:
INGREDIENTS:

1 jar of marshmallow creme (7oz.)
1 tsp pure vanilla extract
3 egg whites
1/4 tsp cream of tartar
1/8 tsp salt
1/4 cup sugar

     Preheat oven to 400' .  Mix the marshmallow creme and the vanilla and set aside.  Place egg whites and cream of tartar and salt in a large bowl or your stan mixer bowl.  Whisk until mixed I used a hand electric mixer.  While mixing add the tablespoon sugar at a time.  Beating on high speed for 2-3 minutes or until stiff peaks form.  Gently stir in half of this mixture into the marshmallow creme mixture mixing well then add the other half when done mixing well pour over top of pie just before the edge.  Form decorative peaks with spatula.  Put into the oven bake for 4 minutes or until slightly browned ..

    1. My dear the crust was easy and is in my opion a nice crust tadted good as well.. I never bought crust maybe once in my life I have always use crisco crust but this is a nice butter crust do try it. Thank you xoxo

  16. Your pie turned out just perfect. Sweet potato pie is one of my favorites, and my Mother could make the best! I don't think I've ever made one. Your's is sure pretty and I bet it was delicious!!
